Rose and pistachio parfait

The flavours in this parfait were inspired by the “Falooda” – a popular sundae-like Indian dessert.

Served on a bed of vermicelli….

…. and a splatter of basil seeds…

 … it is a perfect palate cooler after a selection of Indian street-food!
